Chicken Chorizo Tortilla Soup

  • 7oz package chorizo with or without casing
  • 1 rotisserie chicken
  • 1 14.5 oz can of tomatoes with green chilies
  • 2  14.5oz cans chicken broth
  • 1  15oz can drained black beans
  • 1 medium onion chopped
  • 1 Tbls minced garlic
  • 1 tsp chili powder
  • 1 cup whipping cream
  • Crushed tortilla chips


1. In a medium skillet brown the chorizo breaking into bite size pieces.  Cook for about 7-8 minutes.  Drain and set aside.

2. In a large pot, saute the onion and garlic in 1Tbls of olive oil until soft.

3. Add the chicken broth,  chili powder, tomatoes, beans, chorizo, and shredded chicken.   Bring to a boil and then reduce heat. Simmer covered for 30 minutes.

4. Remove from heat and add whipping cream.  Serve with crushed chips on top. Also you can add shredded cheese and sour cream on top.
